Quite surprising for airport food and a nice touch to offer something unique that was a take on Colorado food. They also had a good amount of Colorado beers available but it was a bit too early to partake in those.

Some carnitas thing smothered in sauce and cheese, on top of flatbread.

This is what I had and Alia had something similar, albeit with vegetables instead of carnitas. We had no idea how to eat it since it wasn't quite a quesadilla but it also seemed weird to use utensils.

I have to say, I was pretty impressed by this place, considering it was in an airport. I have pretty low standards for food in North American airports and it was a nice touch to offer something unique that was a take on Colorado food. They also had a good amount of Colorado beers available but it was a bit too early to partake in those.
